MUSHROOM SOUP
AN ULTRA-SIMPLE SOUP
SO TASTY MY KIDS PESTER ME EVERY DAY!
Ingredients:
1) Button
mushrooms – 100 gm.
2) Potatoes –
275 gm.
3) Onion – 70
gm.
4) Water – 650
ml.
5) Milk – 250
ml.
6) Maida
(Refined white wheat flour) – 1 tablespoon
7) Salt – ¾
teaspoon
To Cook:
Wash and drain the mushrooms. Peel
the onion and the potatoes and chop into chunks. Set a pressure cooker on high
heat. Pour in the water. Tip in the chopped mushrooms, potatoes and onion.
Close the lid. As soon as you hear the first whistle, lower the heat and let
simmer for 5 minutes. Now switch off the heat and let cool naturally. When
cool, transfer the contents (along with the stock) to your food processor. Tip
in the maida and grind to fine paste.
Transfer to your soup pan. Pour in
the milk and tip in the salt. Set on high heat and stir continuously. The soup
will thicken and start to boil nicely. Switch off the heat. Your delicious,
ultra-simple, nutritious mushroom soup is ready to serve. This soup is so
tasty, so very natural that it requires neither any spice, nor any garnish.
Even pepper powder is not required. Be sure to try.
