HOT AND SWEET
Ingredients:
1) Beetroot – 200 gm.
2) Onions – 100 gm.
3) Tender ginger – 1 inch piece
4) Garlic cloves – 3 Nos.
5) Sugar – 75 gm.
6) Vinegar – 50 ml.
7) Medium hot green chilies – 3 Nos.
8) Salt – 1½ teaspoon
To Cook:
Peel the beets, onions, ginger and garlic and chop to pieces. In a food processor, pour 100 ml. of water. Tip in all the ingredients except the vinegar and grind to fine paste. Transfer to a thick bottomed vessel and put on the stove. Boil for 15 minutes stirring frequently to avoid burning at the base. Taste the sauce and add more seasoning or sugar to suit your palate. Add the vinegar and taste again. If you need more tanginess, add a little more vinegar.
Your Hot and Sweet Beetroot Sauce is ready to serve. Use for dipping French fries, cutlets or as a side dish to fried rice. Store in air tight glass jars in the refrigerator. It will taste even better after a week.
