1) DUDEPAK : KONKANI MILK PAYASAM


DUDEPAK
KONKANI MILK PAYASAM

Ingredients:

1)  Short grained scented fine raw rice – 200 gm.
2)  Fresh milk - 2500 ml.
3)  Sugar – 200 gm.
4)  Saffron – 1 pinch
5)  Cardamom – 3 pods
6)  Clarified butter (Ghee) – 50ml.
7)  Cashew nuts – 25 gm.
8)  Raisins – 25 gm.

To cook:

          Soak saffron in 50ml. milk. Heat milk in a thick bottomed vessel. Stir continuously taking care to avoid burning at the base and formation of cream crust at the top. When the milk comes to a boil, wash the rice in tap water and add to milk stirring continuously. As each brand of rice takes different amount of time to cook, check the rice frequently.  Cook till the rice is soft and has bloomed like flowers. 

          The mixture would have reduced and thickened by now. Add the sugar and keep on stirring.  Now add the saffron milk.  Remove the cardamom seeds from the pods and crush them to rough powder and sprinkle.  Turn off the heat and put on the lid to trap the flavors.

          Pour the clarified butter in a pan.  Break the cashew nuts into pieces and put them in the pan.  Roast on low heat till golden brown.  Turn off the heat and add the raisins. Stir gently and empty the pan over the cooked rice.

          Your delicious dudepak is now ready. Enjoy while hot but do not finish it all. Keep some in the fridge for later. It is even tastier when cold.
