40) TENDER MANGO CHUTNEY


TENDER MANGO CHUTNEY
A FINGER BITING CHUTNEY

Ingredients:
1)    Tender mango (medium sized) – 1 No.
2)    Shallots – 7 to 8 Nos.
3)    Coconut – ½
4)    Medium hot green chilies – 2 Nos.
5)    Dry red chilies – 3 Nos.
6)    Curry leaves – 3  sprigs
7)    Salt – 1 teaspoon
8)    Coconut oil – 1 teaspoon

To Make:
Peel the mango and chop to pieces. Omit the stone (seed). Scrape or grate the coconut. Put the grated coconut, the green chilies and the red chilies in a food processor. Do not add any water at all. Grind for 3 minutes stopping and stirring once or twice in between. Chuck in the mango pieces and grind again for a minute. Now add the shallots, the curry leaves, the coconut oil and the salt and grind for one more minute. Stir well and taste. Add more salt if required. Grind for 30 seconds more. Your finger biting Tender Mango Chutney is ready to serve. You can enjoy it with porridge, rice, biriyani or fried rice.
