7) FRESH TOMATO SAUCE



FRESH TOMATO SAUCE 
WITHOUT PRESERVATIVES




Ingredients:

     1)    Fully ripe tomatoes – 1 kg.
     2)    Garlic – 2 bulbs
     3)    Ginger – One 2 inch piece
     4)    Hot green chilies – 4 Nos.
     5)    Sugar – 200 gm.
     6)    Garam masala powder – ½ tea spoon
     7)    Turmeric powder – 1 tea spoon
     8)    Kashmiri chili powder – 2 tea spoons
     9)    Vinegar – 100 ml
     10)     Salt to taste

To Cook:

          Dice the tomatoes into big chunks. Peel the ginger and chop nicely. Peel the garlic and remove the root base.

          Put all the ingredients except vinegar into a mixer and grind to fine paste. If the mixer is smaller, grind in two or three batches.

          Transfer to pan or thick vessel and put on the stove. Stirring frequently, boil for 15 to 20 minutes until well cooked. Now, add the vinegar. Taste and adjust the seasoning to suit your palate, adding sugar, salt or chili powder if necessary. Boil for a minute and turn off the heat. Allow to cool naturally.

Transfer to clean air tight glass containers and refrigerate.
