27) SALTED LIME / LEMON


SALTED LIME / LEMON
A MUST FOR EVERY HOME


Ingredients:
1)    Freshly picked green lime or lemon – 1 kg.
2)    Salt – 750 gm.
3)    Water – 750 ml.

To Cook:
Wash and cut each of the limes / lemons into 8 pieces (halving and halving twice more). Heat up the water and tip in the salt. Boil until the brine thickens and a white skin starts to form at the top. Add the lime / lemon pieces and stir. Boil until the lime / lemon pieces start to go brownish green. The limes would have lost much of their water content and would be skinny in appearance. Switch off the stove and allow to cool naturally.
Carefully transfer to clean, dry, air tight glass jars and store. Keep for at least 1 month without disturbing. Now you can start using the salted lime / lemon. You can store it at room temperature for up to 3 or 4 years. Use only dry spoons to scoop up a small quantity which you can keep on your dining table in a tiny jar for regular use.
A 3 year old salted lime / lemon will have the consistency of thick jelly. A lick of salted lime is excellent to awaken your appetite for food. When taken with porridge, it aids convalescents and feverish patients to get back their digestion.
A must for every home!!!
   
  
Note:
If green lime is not available, you can use ripe lime / lemon. Green limes have superior flavor and taste.
