SANNA POLO
A SPICY VEGETARIAN OMLETTE
Ingredients:
1) Toor dal (lentils) – 200 gm.
2) Raw rice – 200 gm.
3) Coconut – ½
4) Tamarind juice - 2 teaspoons
5) Asafoetida powder – ¼ teaspoon
6) Chili powder – 1 teaspoon
7) Big onion – 1
8) Cooking oil – 50 ml.
9) Salt - 1½ teaspoons
To Cook:
Wash and soak the toor dal and rice in a bowl of water for 1 hour and drain. Grate the coconut. Put the soaked rice, dal, grated coconut and tamarind juice in a food processor (mixie). Add water periodically and grind to a smooth paste. Transfer to a wide bowl.
Peel and chop the onion finely and add to the paste. Tip in the chili powder, asafoetida powder and salt and mix well. Add a little water and mix to bring to the consistency of pancake batter. Put a flat cast iron pan or a non–stick pan on the stove. Smatter some cooking oil in the pan and pour in a ladle of sanna polo batter.
Resting the bottom of the cup of the ladle on the batter, press gently and make circles spreading out the batter in a perfectly round shape towards the edges of the pan. Cover with a cloche and turn down the heat. Check and see if the bottom is roasted. If yes, pour a teaspoon of oil on the polo and flip it over. Caramelize the other side also and serve hot.
