SWEET N' HOT DATE SAUCE

CUTLETS OR FRIED RICE; THIS SAUCE IS A MUST!
Ingredients:
1) Dates – 250 gm.
2) Big onions – 3 Nos.
3) Ginger – 1 ½ inch piece
4) Green chilies medium hot – 3 Nos.
5) Garlic – 1 bulb
6) Sugar – 50 gm.
7) Vinegar – 100 ml.
8) Salt to taste
To cook:
Split the dates and remove the seeds. Soak the dates in boiling water. Use just enough water to cover the dates. Allow to cool slowly.
Peel the onions and cut away the hard base portion. Dice into pieces. Scrape away the skin of the ginger and dice. Peel the garlic and separate the cloves.
The dates will be soft by the time the water cools. Now, pour the dates with the water into a mixer. Add all the other ingredients and grind to fine paste.
Transfer to a thick bottomed vessel and add enough water to reach your desired consistency. Taste and add more seasoning if needed. If you like it hotter, add red chili powder.
Boil the sauce for 15 minutes stirring continuously to avoid burning at the base. Turn off the heat. When cool, transfer to cool dry glass jars. Cap tightly and refrigerate.
Your sweet and hot date sauce is now ready. Serve as a side dish with cutlets, breads of all sorts, spicy rice dishes or simply dip your french fries and enjoy!!!
