33) TOMATO TOAST


TOMATO TOAST
A QUICK TO MAKE SNACK


Ingredients:
1)    Bread slices – 750 gm.
2)    Fully ripe tomatoes – 200 gm.
3)    Eggs – 5 Nos.
4)    Onions – 50 gm
5)    Garlic – 3 cloves
6)    Chili powder – 1 teaspoon
7)    Turmeric powder – ½ teaspoon
8)    Garam masala powder – 1 pinch
9)    Tender curry leaves – 2 sprigs
10)                      Milk – 100 ml.
11)                      Butter for frying
12)                      Salt – 1½ teaspoons

To Cook:
Chop the tomatoes. Peel and chop the onion and garlic. Put the tomatoes, onions, garlic and curry leaves in a food processor and grind to fine paste. Pour it into a coarse stainless steel sieve set on a bowl and press gently rolling the paste from side to side with your fingers until you can collect all the smooth paste in the bowl below.
Break the eggs in another bowl. Pour in the milk. Add the chili powder, turmeric powder, garam masala powder and the salt. Whisk well until the eggs are quite frothy. Combine with the tomato paste and whisk again.
Put a flat nonstick pan on the stove. Pop in a little dollop of butter. Take a slice of bread, dip it in the tomato mix on either side and put it in the pan. Fry on low heat till the base is golden brown. Flip over and caramelize the other side too.
Serve hot. Hungry children coming back from school just love the tomato toast. They will pester you for more.
