97) PATRODA UPKARI


PATRODA UPKARI
A SIDE DISH FOR RICE MADE WITH PATRODO
Ingredients:

     1)    Leftover patrodo – 500 gm.
     2)    Mustard seeds – ½ teaspoon
     3)    Fenugreek seeds – 1 pinch
     4)    Urud dal (split black gram lentils) – ½ teaspoon
     5)    Coconut oil – 1 tablespoon

To Make:

          Shred the patrodo finely with your fingers or chop to fine pieces. Set a thick wok on the stove. Pour in the coconut oil and throw in the mustard seeds. As soon as the mustard seeds are about to finish crackling, tip in the fenugreek seeds. They will start to splutter. Now put in the urud dal. As soon as they turn slightly brown, add the shredded patrodo and stir well. Turn down the heat and cover with lid. Stir every 2 minutes. Your patroda upkari will be ready in 10 minutes. Serve hot. If you like it well roasted, add a little more coconut oil and roast on low heat till it is done to your satisfaction.

          If you have patroda upkari, you can happily eat a plate of rice with no other side dish.
