162) CHRISTMAS TREAT


CHRISTMAS TREAT
AN EASY TO MAKE DATE AND WALNUT DESSERT
Make on or before Christmas Eve and serve at Christmas


Ingredients:

     1)    Seedless dates – 500 gm.
     2)    Walnut kernels – 200 gm.
     3)    Thick creamy milk – 500 ml.
     4)    Thin arrowroot biscuits – 170 gm.

To Make:

          Set a thick wok on the stove. Pour in the milk. Tip in the dates. Let the milk boil for 5 minutes. Stir frequently. Now tip in the walnuts and stir again. Lower the heat.

          Put the biscuits into a food processor and grind to fine powder. Tip in 80% of the powdered biscuits into the wok and stir. Sprinkle the rest of the biscuit powder on a piece of butter paper (around 50 cm. x 40 cm.).

          As soon as the mixture in the wok is as thick as dough, switch off the heat. Use a flat ladle to transfer the hot mixture to the butter paper. Bring the two opposing sides of the paper together and press the bottom portion closer to shape the mixture into a cylinder. Now roll the cylinder tightly in the butter paper. Twist both ends of the paper to tighten the edges of the cylinder. When cool, put the cylinder in the fridge to chill for 5 to 6 hours or overnight.

          Open the butter paper and slice the Christmas treat. Serve chilled. This dish can stay fresh in the refrigerator for up to a month or two. However, it is more likely to disappear as soon as it is served.

Note:

          If butter paper is not at hand, you can successfully use foil or any greased mould or tray of your choice.
